peanuts or almonds?

As the holidays begin to sneak up on me, I asked Becky over at Olives ‘n’ Wine to send me a tasty recipe that is quick but yet oh so tasty!  I’m not sure how she comes up with the delicious dishes that she does, but I’m happy to say she has never let me down, and this time was no different.  See Becky’s guest post below with a fun treat idea for one of your many holiday get together this fall/winter.  Enjoy!

Peanut Butter Joy Bites

Almonds. They seem to be getting all of the attention these days. Not that there is anything wrong with this… I mean, they’re healthy and tasty and all that jazz, but what about the good, old-fashioned peanut?

You know, the peanut that reminds you of baseball games with your grandfather or the circus you begged to attend as a child or your favorite school lunch packed by mom, a tasty peanut butter and jelly sandwich.

Ahh… peanuts. So plain, but yet so good. I mean, what would Target’s Monster Mix be without the peanut? Or how bland would your apple be without the addition of peanut butter?

Yeah, that’s what I thought! Peanuts, the undervalued nut 😉

Now, back to the topic at hand for the day – Peanut Butter Joy Bites.

I’m putting the peanut back into the spotlight with these bites and you won’t miss your friend the almond at all once you sink your teeth into one of my Peanut Butter Joy Bites.

Unless you try to sing the song that is… Almond Joys have nuts, Mounds don’t 😉

 

Peanut Butter Joy Bites

Makes 10 “bites”

Ingredients:

  • 1 cup oatmeal*
  • ½ cup creamy peanut butter
  • 1/3 cup dark chocolate pieces*
  • ¼ cup chia seeds
  • 1TBSP honey
  • 1 cup shredded, unsweetened coconut, optional

Directions:

Mix all ingredients (except for the coconut) in a large bowl. Form bite-sized balls with hands. If so desired, roll in coconut for a healthier version of our favorite *Almond* Joys.

Notes: If gluten-free, make sure oatmeal used is certified GF. For the dark chocolate pieces, I purchased my favorite dark chocolate bar and broke it apart with the end of a spatula. Anger management 😉
