easy peasy

Time to slim up for summer ladies.  If you’re like me and didn’t get to take a spring vacation this year, you might be holding onto a few extra lbs and need a little motivation.

Well, summer is just around the corner and sounds like a pretty good reason to get motivated to me, so I thought I would help you out with a simple recipe that takes little to no prep.  The only prep you need is massaging your kale.  The lemon garlic dressing will do the rest by moistening the shredded kale while adding a delicious citrus flavor.

Not only is it easy, but it can be paired with any main course.  One peace of advice, if you plan on serving the dish to more than 3-4 people be sure to double the recipe because the kale will shrink after marinating in your easy peasy homemade dressing.  Give it a try and let me know what you think!

Kale Lemon Garlic Salad

1 bundle of kale

1 TBS olive oil

1.5 TBS of garlic

3 TBS lemon juice

3 TBS slivered almonds

**add feta cheese for taste 😉
